# Expert Advice:

01 -
  • It takes less than half an hour from start to finish, perfect for when you need something fast but impressive.
  • The creamy, tangy feta melts into the sweet roasted tomatoes in a way that feels indulgent but stays light.
  • You probably already have most of these ingredients sitting in your kitchen right now.
02 -
  • Don't add the basil before baking or it will turn dark and bitter, fresh herbs always go on at the end.
  • If your feta is very dry and crumbly, soak it in cold water for 10 minutes before using to bring back some creaminess.
  • Let the toasts cool for just a minute before serving or the molten cheese will burn your mouth, I learned this the hard way.
03 -
  • Use block feta in brine for the creamiest, most luxurious melt, the pre-crumbled stuff can be dry and chalky.
  • If your tomatoes aren't very sweet, add a tiny pinch of sugar to the bowl when you toss them, it helps them caramelize.
  • Press down gently on the bread once it comes out of the oven to help the toppings settle into any air pockets.
