02 - In a blender or food processor, combine cottage cheese, shredded Monterey Jack, sour cream, garlic, cumin, smoked paprika, salt, and black pepper. Blend until completely smooth and creamy.
03 - Transfer the blended mixture to a medium saucepan. Heat over medium-low, stirring constantly, until warmed through and cheese is melted, about 4 to 5 minutes.
04 - Stir in roasted corn, jalapeño, and green onions. Cook for 2 additional minutes.
