01 - Preheat oven to 400°F. Toss diced zucchini and bell pepper with 1 tablespoon olive oil, spread onto a baking tray, and roast for 20 minutes or until tender.
02 - Bring a large pot of salted water to a boil. Add the whole wheat macaroni and cook until al dente according to package instructions. Drain and set aside.
03 - In a large skillet over medium-high heat, add the lean ground beef. Sauté for 6-8 minutes until fully browned. Drain any excess fat.
04 - Add roasted vegetables, cooked pasta, tomato sauce, and herbes de Provence to the skillet with beef. Stir until evenly combined and heated through. Season to taste.
