# Directions:

01 - Boil salted water in a large pot and cook pasta until al dente according to package directions. Reserve 1/2 cup pasta water, then drain pasta.
02 - Heat olive oil in a large skillet over medium heat. Add shallots and cook for 2 to 3 minutes until softened. Stir in garlic and chopped sage, cooking for 1 minute until fragrant.
03 - Add pumpkin puree, vegetable broth, almond milk, nutmeg, black pepper, and salt to the skillet. Simmer for 5 to 7 minutes, stirring occasionally, until sauce is warmed and slightly thickened.
04 - Reduce heat to low and whisk in Greek yogurt and 2 tablespoons grated Parmesan until smooth and creamy. Adjust consistency with reserved pasta water if needed.
05 - Add cooked pasta to the sauce, tossing to coat evenly. Warm through for 1 to 2 minutes over low heat.
06 - Plate the pasta and garnish with additional sage leaves and grated Parmesan cheese as desired.
