Juicy peaches meet miso caramel beneath a crunchy oat crumb for a warm, buttery, flavor-packed dessert.
# What You Need:
→ Peach Filling
01 - 6 cups ripe peaches, peeled and sliced (approximately 6–7 medium peaches)
02 - 2 tablespoons granulated sugar
03 - 1 tablespoon freshly squeezed lemon juice
04 - 2 tablespoons cornstarch
→ Miso Caramel Sauce
05 - 1/2 cup granulated sugar
06 - 2 tablespoons water
07 - 1/2 cup heavy cream
08 - 1 tablespoon unsalted butter
09 - 1 tablespoon white miso paste
10 - 1/2 teaspoon vanilla extract
→ Oat Crisp Topping
11 - 1 cup old-fashioned rolled oats
12 - 1/2 cup all-purpose flour
13 - 1/2 cup packed light brown sugar
14 - 1/2 teaspoon ground cinnamon
15 - 1/4 teaspoon fine sea salt
16 - 1/2 cup unsalted butter, cold and cut into cubes
# Directions:
01 - Preheat oven to 350°F (180°C). Grease a 2-quart baking dish with butter or nonstick spray.
02 - In a large mixing bowl, gently toss peaches with granulated sugar, lemon juice, and cornstarch until the fruit is evenly coated. Evenly spread the peaches into the prepared baking dish.
03 - In a small saucepan over medium heat, combine granulated sugar and water. Simmer undisturbed until the mixture becomes a light amber color, around 5–7 minutes. Remove from heat and slowly whisk in heavy cream (take care, as the mixture will bubble vigorously). Add unsalted butter, stirring until fully melted. Whisk in white miso paste and vanilla extract until the sauce is smooth. Allow to cool slightly.
04 - Drizzle the warm miso caramel sauce evenly over the prepared peaches.
05 - In a separate mixing bowl, combine oats, all-purpose flour, light brown sugar, cinnamon, and sea salt. Add cold, cubed unsalted butter and work it into the mixture using your fingertips or a pastry cutter until it resembles coarse crumbs.
06 - Evenly distribute the oat crisp topping over the peaches and caramel sauce.
07 - Bake in the preheated oven for 35–40 minutes, until the topping is golden and the filling is bubbling around the edges. Allow to cool for 10 minutes before serving.
