One-Pot Mexican Rice Beans (Printable)

# Directions:

01 - Heat large deep skillet or Dutch oven over medium heat. Add a splash of oil and sauté chopped onion for 2 to 3 minutes until softened.
02 - Stir in minced garlic and diced red bell pepper; cook for an additional 2 minutes until fragrant.
03 - Add rinsed long-grain white rice and stir to coat with vegetables and oil. Toast for 1 to 2 minutes.
04 - Pour in diced tomatoes with juice, vegetable broth, corn, black beans, ground cumin, smoked paprika, chili powder, dried oregano, salt, and black pepper. Stir thoroughly to combine.
05 - Bring mixture to a gentle boil, then reduce heat to low. Cover and simmer for 20 to 22 minutes until rice is tender and liquid is mostly absorbed.
06 - Remove from heat and let rest, covered, for 5 minutes.
