# Directions:
01 - Preheat oven to 350°F and line a mini muffin pan with paper liners or grease lightly.
02 - Whisk together flour, cocoa powder, baking powder, and salt in a medium bowl.
03 - In a large bowl, beat vegetable oil, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
04 - Stir grated zucchini into the wet mixture until evenly distributed.
05 - Add dry ingredients to wet ingredients and gently mix until just combined; fold in mini chocolate chips.
06 - Spoon batter evenly into prepared mini muffin pan, filling each cup about three-quarters full.
07 - Bake for 18 to 20 minutes until a toothpick inserted comes out with a few moist crumbs.
